I didn’t think that I could enjoy chocolate chip cookies more, and then I made these. And my mind was kind of blown. Hey guys and welcome back to another recipe! Today I am sharing a recipe for chocolate chip cookies that incorporates miso paste into the batter to create a wonderfully salty, sweet cookie that is absolutely mouth-watering.
I don’t know about you but I don’t really enjoy super sweet desserts. When I am eating a baked good or dessert I want to taste the flavor of the ingredients. I don’t want to taste straight-up sugar because that’s just nasty and anyone saying otherwise is lying to themselves. It actually makes me kind of gag just thinking about eating straight sugar. I think I have mentioned this in the past and in other blog posts but I really love well-rounded desserts with a lot of flavor and this recipe fits the description perfectly!

I never thought of adding miso paste, of all things to anything I would bake but I have found that when you add strange ingredients to anything you may bake it usually makes the recipe better. Isn’t that so strange? Some of the best things I have eaten were usually a blend of ingredients that should taste absolutely horrible together but don’t!
Even though you can barely taste the miso paste in these cookies (if anything it just makes the cookie moister) and I think it significantly changes the texture and spread of the cookie. I also believe it changes the way the cookie browns as well. If you like a cookie that is less sweet, and slightly chewy with a wonderful umami flavor this is the cookie for you! I usually buy miso paste in a large tub because that seems to be the only way I can buy it where I live so I love the ability to use up the rest of the miso paste without having to throw it out! Miso Chocolate Chip Cookies
Equipment
- Kitchenaid Mixer
- Measuring spoons and cups
- cookie scoop
- Sheet tray
- spatula
- Parchment paper
Ingredients
- 113 Grams Butter, softened
- 100 Grams Brown sugar
- 2 Eggs
- 1 Splash Vanilla
- 123 Grams AP flour
- 4 Grams Salt
- 3 Grams Baking soda
- 256 Grams Chocolate Chips
- 64 Grams Miso paste
Instructions
- Preheat the oven to 375 F and prepare sheet trays. Place butter and brown sugar in the bowl of a stand mixer and beat with a paddle until light and fluffy. Add in miso paste and continue beating until mixed. Add in eggs and vanilla extract and continue beating. In a seperate bowl sift together flour, salt, and baking soda before adding it to the wet mixture. Mix to combine before adding in chocolate chips.
- Scoop cookies on a sheet tray and baking for 12-15 minutes or until golden. To have chewier cookies bake to around 10 minutes.
